Summary

WEIGHT LOSSES AND THE TEMPERATURE GRADIENT WERE MEASURED ON BULK APPLES AND CARROTS IN A ROOM DESIGNED TO PREVENT HORIZONTAL HEAT TRANSFER. WEIGHT LOSSES DECREASE WHEN AIR FLOW RATE INCREASES, BUT THE LOSSES INCREASE WITH AIR FLOW RATE AT THE INLET OF THE STACK OF PRODUCTS. THERE WAS A DECREASE IN TEMPERATURE GRADIENT WHEN AIR FLOW RATE INCREASED. THIS DECREASE DEPENDED ON RESPIRATION HEAT AND THE TRANSPIRATION COEFFICIENT.
