Summary

The main aim of the research was to define the influence of CA (4% CO2, 3% O2 and 93% N2) on the kinetics of changes in vitamin C content and chlorophyll pigments during cold storage of two varieties of savoy cabbage (Brassica oleracea L. var. sabauda) Owasa and Wirosa. The cabbage was stored under CA and under air (control samples K), in temperature 0-1°C. Storage time: 42 (variety Wirosa) or 60 days (variety Owasa). It was proven that CA slowed down the breakdown of vitamin C and chlorophyll pigments in the stored vegetables in comparison to storage in air. Controlled atmosphere prolongs the periods during which vegetables maintain their high biological value during cold storage.
