Summary

Survival curves and thermal-inactivation-speed constants for S. cerevisiae in strawberries pasteurized at 64 deg C, as a function of storage at -18 deg C. For the first 3 months, storage had no effect on thermal inactivation. Beyond that, an appreciable increase in the thermal-inactivation rate was noted.
