Summary

Candida maltosa YP1 is a yeast contaminant occurring in dairy products. It is able to compete with lactic bacteria starters. This study investigated the growth dynamics of C. maltosa. It was shown that a protective culture comprising L. rhamnosus and Propionibacterium freudenreichii subsp. shermanii partially inhibited C. maltosa YP1, but the authors highlight the need to maintain good hygiene and manufacturing practice.
