THE EFFECT OF GROWTH TEMPERATURE ON EXTRACELLULAR PROTEASE AND LIPASE SYNTHESIS BY A NUMBER OF PSYCHROTROPHS GROWN IN MILK WAS DEPENDENT ON STRAIN. WITH ALL BACTERIA STUDIED, LITTLE OR NOENZYME WAS PRODUCED DURING GROWTH AT 275 K (2 DEG C). WHEN PSYCHROTROPHS WERE GROWN IN SKIM AND WHOLE MILK, RESULTING PROTEASE AND LIPASE LEVELS WERE SIMILAR IN MOST CASES. G.R.S.
