Summary

Antemortal stress affects carbohydrate metabolism and results in a reduction of the glycogen content of the muscles. In the case of severe depletion of glycogen in beef dark cutting is registered. Especially susceptible to stress conditions are bulls. Therefore it was investigated how stress conditions affect carbohydrate metabolism and particularly the glycogen and ATP content of different muscles. Also considered were the possible effects of cooling on meat quality characteristics.
