Summary

A method of evaluating colour change of chicory under different shelf storage conditions was developed. In experiments comparing 4 storage temperatures and 3 humidities, a comprehensive index was presented and used for estimating the undesirable colour change (to brown and red). The index was based on comprehensive consideration of the coloured area and degree of the colour change. Other overall colour change phenomena, such as growth of yellow leaves and greening of leaves under illumination were analysed. The effects of changing temperature on the index are discussed.
