Summary
Selected textural properties of nine strawberry cultivars (Don, Granda, Idea, Madeleine, Marmolada, Maya, Miss, Paros, and Patty), were studied by means of instrumental texture analysis and quantitative evaluation of drained juice. Fruits were freezed for 30 days, then the effects of thawing on juice loss, fruit firmness and pulp cohesiveness were analitically evaluated.
