Summary

Storage of "Baleron" and "Szynkowka" (two pork-based meat products) were investigated. Their stability during storage, after vacuum or modified atmosphere (20% CO2 and 80% nitrogen) packaging in plastic films was assessed. Product quality was mainly influenced by storage temperature and type of product.
