Summary

The authors' results show that the percentage of cells of Listeria monocytogenes responding to heat shock not only depended on the duration of heat shock but also on the previous storage of cells. The optimum heat shock temperature depended on the temperature at which cells were grown. The thermotolerance attained depended not only on the amount of heat but also on the temperature at which heat was supplied. Only the survival curves of heat-shocked cells had shoulders. Shoulders did not appear when recovery of survivors was carried out in medium with 3% sodium chloride added.
