Summary
An accurate design and control of the refrigeration system is very important in order to achieve adequate product quality and good process reliability in wineries. The authors have studied: 1) cold requirements profile in wineries, by means of knowledge based systems; 2) thermal behaviour of fermentation process; 3) the use of thermal storage systems, through modelling and simulation; 4) fermentation control for a rational use of cold in wineries.
