Optimizing the parameters of a winery refrigeration system.

Summary

Refrigeration is a particularly important component of winemaking, being used for juice cooling, fermentation control and the cold stabilisation of finished wines. Boadbridge (1994) estimated that the energy demand for refrigeration accounts for 60-70% of the total energy used in wineries. The study examines the efficiency of the secondary (brine) cooling system on a wine tank at Charles Sturt University. The fall in tank temperature was monitored during the trials, providing empirical data for the heat transfer calculations. The effects of agitation on the overall refrigeration efficiency was also investigated.
