Summary

In the study, general applicable models and specific growth models for Listeria are used to evaluate the ability to predict the growth of this pathogen on meat products. Literature values for growth rates were compared with predictions given by different models. Only small differences between the various models were observed. Model predictions were accurate within a factor of about two; in many cases the accuracy will be sufficient to use these models as a tool in management decisions.
