Summary

This international conference on the theme "quality management of plant-based food materials throughout the production chain, from the field to the table" was held in Turku, Finland, April 22-25, 1998. The 89 papers presented are on developments relating to the improvement of vegetable and fruit quality through plant breeding, genetic manipulation, modification of cultivation technology and optimisation of harvesting and storage techniques. The concept of functional food and sustainable production are also discussed. Session headings are: quality challenges in future; consumer attitudes to improving crop and food quality; sustainable production; effects of postharvest practice on quality; effects of preharvest practice on quality; quality assessment; quality improvements and functional foods. Some of the papers will be abstracted in a future issue of the IIR Bulletin.
