EXPERIMENTAL DETERMINATION OF LOCAL FILM HEAT TRANSFER COEFFICIENT DURING A FOODSTUFF COOLING PROCESS.

DETERMINATION EXPERIMENTALE DU COEFFICIENT DE TRANSFERT DE CHALEUR LOCAL AU COURS DE LA REFRIGERATION DE PRODUITS AGRICOLES.

Author(s) : ALVAREZ G., LETANG G.

Summary

THE LOCAL FILM HEAT TRANSFER COEFFICIENT INSIDE BINS PILED ON A PALLET WAS EXPERIMENTALLY DETERMINED. CYLINDRICAL AND SPHERICAL METALLIC TEST PROBES WERE DEVELOPED. THE MODEL PRODUCT CONSIDERED HAS A SPHERICAL SHAPE. THE RESULTS SHOW THAT THE VELOCITY PARAMETER AS WELL AS THE TURBULENCE LEVEL HAVE A STRONG INFLUENCE ON THE LOCAL FILM HEAT TRANSFER COEFFICIENT WHICH CAN INCREASE UP TO 40%. THERE IS A RELATIONSHIP BETWEEN THE TWO SHAPES OF PROBES.
