Summary

Listeria monocytogenes has been actively hunted down by all industrial stakeholders since the mid-1980s. Ensuring food safety can only be achieved by preventing the occurrence of this microorganism. Two detection techniques were tested with respect to a reference technique (NF ISO EN 11290.1 = 5 days), the aim being to meet the needs of industrial stakeholders in the foie gras field by applying release-type analysis, with results obtained within roughly 24 h. This article presents both these techniques, all the processes applied in order to validate use of these techniques on foie gras, and also describes all the existing techniques.
