Summary

This file is totally devoted to food safety and consists of 4 articles. In the first, the authors draw attention to pathogenic germs likely to taint foodstuffs, their origins and growth conditions. The second article presents hygiene recommendations for the preparation and preservation of babies' bottles; these recommendations were put forth by a think tank set up by Afssa following serious infections contracted by babies from Enterobacter-sakazakii-contaminated bottles. The third article deals with the European Food Safety Authority, which draws conclusions from the first three years of operation of the Panel on Biological Hazards. This committee has released 36 statements on food hygiene, microbiology, foodborne zoonoses, the treatment of waste, and on contagious spongiform diseases. The file is concluded by an article present European microbiological criteria, published in the Official Journal of the European Commission on December 22, 2005.
