Summary
Foods are considered to be a part of the environment, which means that food microbiology belongs to environmental microbiology and hygiene. During their evolution, microorganisms have developed a marked biochemical differenciation, as well as diversity of metabolism, justifying their significance in the natural cycles of elements. As microbial contamination the author understands all processes bringing microorganisms into and/or onto foods. He makes the difference between undesirable, tolerable and desirable contaminants, as well as between primary and secondary contamination. The relations between risk analysis, HACCP-concept and predictive microbiology are presented.
