Summary
The possibility of storing truffles in a 70 g package sealed with 3 different plastic films characterized by an effective gas barrier, is reported. The plastic film named "A" demonstrated better storage characteristics because of a rapid internal atmosphere equilibrium with high CO2 content; therefore, very high marketability, close to 100% after 14 days, was maintained. Weight losses reached 1% after a 4-week storage period. The deformation after a 4-week storage period was very small.
