Summary

THE STORAGE LIFE OF FRUIT AND VEGETABLES CAN BE IMPROVED BY MODULATING VARIOUS ENVIRONMENTAL PARAMETERS SUCH AS TEMPERATURE, OXYGEN AND CARBON DIOXIDE LEVELS AT THE BEGINNING OR DURING THE POST-HARVEST PERIOD. A REVIEW OF THE MAIN EXPERIMENTAL RESULTS IS PRESENTED AND SOME FUNDAMENTAL ASPECTS ARE ANALYSED. TWO SERIES OF EXPERIMENTS ARE STUDIED: THERMAL AND GASEOUS PRETREATMENTS AND GRADUAL MODIFICATIONS OF THE STORAGE TEMPERATURE AND ATMOSPHERE.
