Summary

The postharvest temperature falling down must occur precociously, and in most cases, rapidly. This requirements are difficult to be respected with prepacked and stacked products. A measuring method and sensors have been developped to have access to the heat and mass transfer conditions inside a bilky handling unit like a pallet. Results allow optimization and improvements of processes and transportation.
