A dynamic model on chilling injury in vegetables during cold storage.

Summary

A model has been developed, based on very fondamental but simplified processes occurring at membrane and cell plastids level. The model describes the process of chilling injury as dependent on both time and temperature, incorporating a so called deferred action. This deferred action is described as the degradation of a radical scavenging system, whereas the radicals themselves are the direct initiators of the chilling injury in an autocatalytic reaction (peroxydative decay of cell membranes), producing more radicals. The proposed model can be applied to study, predict and prevent the effects of various temperature-time combinations on the behaviour of the product quality.
