Summary
The analysis of the fruit and vegetable freezing conditions in freezers in the dense layer was conducted. The features of the fruit and vegetable freezing process associated with the porosity of the dense layer were identified. The dependence linking the cooling air flow temperature with its velocity and thermal characteristics during freezing of fruit and vegetables was determined. An example of calculating the performance of freezing apparatus for freezing plums in a thick layer is given.
