Summary
This part deals with the contemporary freezing technologies. The traditional freezing methods and equipment have been presented: blowing tunnels along with fluidisation tunnels, contact freezers as well as immersion freezing appliances. The cryogenic technologies such as LIN and LIC along with potential areas of its applications have been also presented in the paper. The following part of the paper deals with some technical aspects of industrial food freezing. See also this Bulletin, reference 2007-1165.
