Summary

In this study, a 5-strain mixture of Listeria monocytogenes was inoculated onto frankfurters with 3 different concentrations. The frankfurters were then stored in vacuum-packaging at 10°C for up to 48 days. The results demonstrated that the concentration o spoilage microform appears to exert a slight impact on the growth of L. monocytogenes in the packages.
