Summary

Propeller fans are widely used in various food production processes. However, the usage of the propeller fans is merely based on the scientific intention therefore the turbulent flow that is the most unique property of propeller fans is not adequately utilized in many cases. In our previous report, the authors measured velocity and turbulence intensity in the axial direction of the flow from a propeller fan and heat transfer coefficient obtained by the flow. In present article, detailed 3-dimensional flow measurement was made to disclose the main flow direction by applying 3-hole pitot tube in order to realize more accurate estimation of flow turbulence. Finally, the improvement of industrial food cooling process was proposed by combining the obtained heat transfer coefficient distribution in the flow field made by propeller fan and 2-dimensional heat conduction calculation inside of the food materials.
