Summary

A NEW DEVICE THAT CAN BE USED INDUSTRIALLY FOR SPRAYING ANTISEPTIC AEROSOLS ON MEAT CARCASSES IN COLD STORES. THE CONDITIONS AND RESULTS OF TESTS ON BEEF SIDES ARE REPORTED. THE RESULTS ARE SATISFACTORY, MAINLY FOR THE WATER LOSSES OF PRODUCTS WHICH ARE REDUCED TO A LARGE EXTENT COMPARED TO CONVENTIONAL METHODS. THE VARIOUS ADVANTAGES OF THIS NEW TECHNOLOGY ARE DISCUSSED. R.R.
