Summary

A CHEMICAL KINETIC METHOD WAS EMPLOYED TO DESCRIBE CHANGES IN THE SENSORIAL QUALITY OF APPLE JUICE DURING COLD STORAGE. IT IS SHOWN THAT COOLING INFLUENCES THE RETENTION OF TASTE, ODOUR AND COLOUR IN APPLE JUICE.
