Summary

STUDY OF POST-MORTEM ATP INTO IMP CONVERSION AND GLYCOLYSIS OF BOVINE NECK MUSCLES DURING STORAGE AT VARIOUS TEMPERATURES. CORRELATIONS WITH THE WATER-HOLDING CAPACITY OF THESE MUSCLES NOT SUBJECTED TO A HEAT TREATMENT WITH OR WITHOUT SALT. SALTING PRIOR TO RIGOR MORTIS IMPROVES WATER-HOLDING CAPACITY. BY ACTING ON STORAGE TEMPERATURE ATP CONVERSION CAN BE SLACKENED. (Bull. bibliogr. CDIUPA, FR., 15, N5, MAY 1981, 72, 155872.
