STUDY OF POST-MORTEM ATP INTO IMP CONVERSION AND GLYCOLYSIS OF BOVINE NECK MUSCLES DURING STORAGE AT VARIOUS TEMPERATURES. CORRELATIONS WITH THE WATER-HOLDING CAPACITY OF THESE MUSCLES NOT SUBJECTED TO A HEAT TREATMENT WITH OR WITHOUT SALT. SALTING PRIOR TO RIGOR MORTIS IMPROVES WATER-HOLDING CAPACITY.
