Summary

PROTEIN CONTENT, PROTEOLYTIC ACTIVITY AND TTC (TETRAROLIUM TRIPHENYL CHLORIDE) REDUCING CAPACITY OF A PSYCHROPHILIC AND A MESOPHILIC YEAST CULTURED AT OPTIMAL AND SUBOPTIMAL TEMPERATURES WERE STUDIED. IT WAS FOUND THAT THE PROTEIN EXISTED IN A MORE DISAGGREGATED FORM. MAXIMUM ENZYME ACTIVITIES WERE ALSO FOUND IN PROTEINS OF LOWER MOLECULAR WEIGHT IN YEASTS CULTURED AT SUBOPTIMAL TEMPERATURES.
