Influence of thermal radiation on weight loss in delicatessen cabinets.

Summary

Delicatessen cabinets can be found in most supermarkets and are used to retail and display unwrapped chilled foods, including fresh and cooked meats, salads and pies. High operating costs for these cabinets are due to weight loss which occurs whilst unwrapped food is on display. The influence of thermal radiation in chilled food was not considered to have a major significance on the operating costs of delicatessen. The paper summarises the results from an investigation that shows that thermal radiation has a very significant effect on weight loss. A low radiation prototype is described and has been used to demonstrate a 50% reduction in operating costs for the retailer.
