Predictive modelling for refrigerated display cabinets.

Summary

The study aims to evaluate the effect of product location inside refrigerated display cabinets on the product temperature and predicted microbial growth. Computer software for the air flow and heat transfer was used. Heat transfer simulations were compared with measured temperatures in methycellulose food simulators. Good agreement between experimental and calculated product temperatures was obtained. Then a predictive growth model was used to calculate microbial population on the basis of the calculated product surface temperature.
