CHILLED AND FROZEN PRODUCTS STORED IN OPEN RETAIL CABINETS RECEIVE A CONSIDERABLE HEAT INPUT FROM THE WARMER SHOP THROUGH THE SERVICE OPENING. THE TOP (OR OUTERMOST) LAYER OF PRODUCTS IS THEREFORE WARMER THAN THE DEEPER LAYERS. IN THIS PAPER TECHNIQUES ARE PRESENTED FOR MEASURING THE HEAT INPUT AND THE EMISSIVITY OF PRODUCTS. AN ESTIMATE IS MADE OF THE DECREASE IN STORAGE TIME OF PRODUCTS IN THE TOP LAYER.
