Summary
To meet the highest of food safety standards and to prevent any form of cross contamination between fully cooked, partially cooked and uncooked products; people, air and product in each section are totally separated. Staff cannot move from one section to another without a change of clothing, each section has its own ablution facilities for staff, and each section has its own air handling units to prevent any cross flow of air from one section to another.
