Summary

A comparative investigation was made of the effect of two kinds of modified atmosphere (MA1: 75% CO2, 20% N2, 5% O2; MA2: 80% CO2, 20% N2) and atmospheric air on bacterial growth in cooled chicken breasts and legs. The samples were stored at temperature= 0-2 deg C from 8 days (legs-K) to 20 days (breasts-MA). The growth of mesophilic microflora, psychrotrophic organisms, Pseudomonas and Lactobacillus bacteria, Escherichia coli, proteolytic bacteria and anaerobic spores in the meat was determined. Results are given.
