Summary

Food temperatures during transport are a concern for policy makers, due to the link between temperature, quality and safety. National guidelines such as The Australian Coldchain Guidelines provide recommendations on the maximum and minimum food temperatures that should be expected during transport. Other guidelines establish maximum limits of particular microorganisms that can be present just before the product reaches the final consumer.
