Summary
Brief summary of the work of the Food and Development Research Centre (Canada) in the field of fruit and vegetable irradiation. The place and the aims of irradiation as a preservation process are mentioned (cooling, controlled atmosphere, etc), as well as the Centre's contribution to research into ways of minimizing harmful effects of gamma irradiation by combining it with other preservation methods. Strawberry preservation under controlled atmosphere and irradiation and investigations on the causes of vegetable tissue softening are given (analysis of membrane degradation). J.R.
