IN AUSTRIA, MARKET MILK HAS TO BE MARKED WITH AN INDICATION OF HOW LONG IT CAN BE KEPT AT 276-282 K (3-9 DEG C) WITHOUT NOTICEABLE CHANGES IN SENSORY PROPERTIES. IN A SURVEY, THE DECLARATION RANGED FROM 3 TO 6 DAYS AND ACTUAL SHELF LIFE AT 282 K RANGED FROM 5 TO 14 DAYS. THE MERITS OF SEVERAL TECHNIQUES FOR ESTIMATING THE DEGREE OF BACTERIAL RECONTAMINATION OF MILK DURING PROCESSING ARE COMPARED, AND SURVEY RESULTS ARE TABULATED.
