Summary
Ice slurry is an advanced refrigeration technology in many direct contact food applications. It provides much faster cooling and delivers more attractive preservation effects than other types of ice or the brine chilling system. This paper provides an overview of the latest development of the ice slurry technology in various industries, including bakery, produce packing, supermarket and fishery. Market demands and challenges are discussed for each industry, and the state-of-the-art solutions using ice slurry are described in details through examples of installations.
