Application of ice slurry in the food industries.

Summary
Ice slurry is an advanced chilling technology in the food industries. It provides much faster cooling and delivers more attractive preservation effects on the food product than other types of ice or the water chilling system. This paper presents a patented variable-state ice slurry system, and its application in produce packing plants, poultry plants and meat processing plants. Benefits of using ice slurry for food cooling and preservation are discussed in detail for each application. Future challenges and opportunities of applying the ice slurry technology are also addressed.
