Summary

Whey protein isolate (WPI) films and coatings containing a lactoperoxidase system reduced the number of L. monocytogenes and inhibited cell growth on microbial medium and smoked salmon. Aerobic microorganisms and yeasts and moulds on smoked salmon were also inhibited.
