Summary

The effect of freezing temperatures and the extent of freezing injury on rice samples with various levels of moisture content was investigated, and the effect of a temperature below ice point during long-term storage on the physiological properties of rice assessed. Rice with a moisture content of less than 17.8% did not freeze even at a temperature of -80 °C. It is concluded that there is no need for concern about rice freezing in farm silos at temperatures below the ice point during winter. Low temperatures and low moisture content minimized the physiological activities in rice and the deterioration of rice quality.
