A PRESENTATION OF EQUATIONS RELATING TO WATER SORPTION ISOTHERMS IN FOODS. FOR A GIVEN TYPE OF FOODSTUFF, THE EQUATIONS FOR WATER ACTIVITY CORRELATE WELL WITH TEST DATA. THE AUTHORS ARE OF THE OPINION THAT EXISTING PUBLICATIONS DEALING WITH WATER SORPTION PROPERTIES IN FOODSTUFFS CAN BE USEFUL IN SELECTING SUITABLE EQUATIONS.
