Summary
Measurement of the proteolytic activity of 10 Bacillus colonies under different temperature (2-37 deg C) and water activity (0.748-0.980) conditions. The reduction of water activity and temperature cause a reduction of proteolytic activity. The influence of temperature is more marked than that of water acitivity.
