REVIEW OF THE SOLUTIONS APPLIED TO THE PROBLEMS RAISED BY MEAT PRESERVATION IN DEVELOPING COUNTRIES. THE AUTHOR GIVES THE HISTORY AND SHOWS HOWREFRIGERATION IS INVOLVED IN THE MEAT TRADE AND VERY DEPENDENT ON THE LOCAL STAGE OF DEVELOPMENT. HE DIFFERENTIATES BETWEEN LARGE TOWNS, SMALL CENTRES AND VILLAGES AND WELL-TO-DO AND POOR CONSUMERS WITH DIFFERENT COOKING HABITS, ALL THESE VARIOUS CATEGORIES REQUIRING VARIOUS SOLUTIONS. HE COMMENTS UPON THESE DIFFERENT SOLUTIONS AND STRESSES THE CONSEQUENCES OF THE FREQUENT ABSENCE OF REFRIGERATING EQUIPMENT. HE CONCLUDES WITH THE TECHNICAL, ECONOMIC AND SOCIAL CONDITIONSON WHICH A SIGNIFICANT FUTURE DEVELOPMENT OF REFRIGERATION DEPENDS AND HE STRESSES UPON THE IMPORTANCE OF ACCOMPANYING TRAINING OF MEN.
