Summary

The use of very low temperatures has enabled us to take advantage of natural products all year round, but has brought with it health risks to those working in these conditions. Strict regulations cover work involving hot conditions, but the only requirement concerning work involving cold conditions is the supply of suitable protective clothing. The document describes: the sectors concerned: mechanical refrigerating plant (freezing tunnels and processing and preparation zones); risks concerning the effects of the ambient temperature (the influence of chilling on manual dexterity; body heat loss and temperature regulation; evaluation of cold ambient conditions and determination of the degree of insulation to be provided by clothing; recommendations designed to limit the effects of a cold ambience); other refrigeration-plant-related risks (main refrigerants; plant design; use of refrigerating plant; safety of personnel working in cold rooms).
