Summary

This technical guide is intended to help those involved in refrigerated storage to implement the HACCP method in their plant. The guide is based on the 93/43/EEC guidelines published after the June 14 Council meeting on food hygiene and adapted for the storage sector by the ministerial decree dated April 3, 1996, defining approval conditions for companies involved in storage of animal feed or foodstuffs of animal origin. Summary: general measures (hazard analysis; control of risks; monitoring); practical application sheets for each of the four stages in goods handling in a public refrigerated storage plant (receipt, reception and dispatch, cold storage itself, freezing); general instructions for setting up a cleaning procedure (with application in each area).
