Methods for freshness measurement based on electrical properties of fish tissue.

Summary

A short review is given on the principles on which freshness measurements making use of the electric properties of fish are based. Some practical developments of instrumentation as well as their applications on fish and fishery products are presented and the advantages and disadvantages of dielectric properties measurements in fish are described.
