Summary

This comprehensive review of irradiation used to provide microbiologically safe foods covers: pathogens in various foods, worldwide incidence of outbreaks of foodborne diseases, irradiation used to address these problems, measurement of radiation sensitivity, factors influencing the resistance of food pathogens and the selection of irradiation treatment. The microbiological safety of irradiated food is dealt with and the scope of irradiation technology applied in addition to refrigeration technology and other postharvest technologies is discussed. Many references are provided.
