Summary

The pathogenic bacterium Listeria monocytogenes is regularly found in sliced prepackaged deli meats such as Bologna-type sausage and cooked ham. During cold storage it is able to multiply above the tolerated level of 100 cfu/g and, therefore, may present a potential health risk to the consumer. Qualitative damage may occur through the activities of certain lactic acid bacteria, enterobacteriaceae and Brochothrix thermosphacta. Periodic microbiological investigations provide important data for the evaluation of these products with respect to consumer health. A total of 200 retail samples were quantitatively analysed for L. monocytogenes.
